Avocado Sauce
  • 1 medium Avocado
  • 1/2 cup Sour Cream or Greek yogurt
  • 2 tablespoons Lemon/Lime Juice fresh
  • 1/4 cup Cilantro Leaves omit if not desired
Taco Filling
  • 1 pound Lean Ground Turkey 85/15 or 93/7
  • 1 cup Chopped Onion yellow or white
  • 1 can Canned Black Beans drained
  • 1 can Green Chiles or jalapeños for more heat
  • 1 packet Taco Seasoning homemade or store-bought
  • 1 cup Monterey Jack Cheese substitute with cheddar if desired
Taco Assembly
  • 8 count Fajita-Sized Flour Tortillas

Instructions
  1. Make the Creamy Avocado Sauce: Blend avocado, sour cream, lime juice, cilantro, salt, and water until smooth. Refrigerate.
  2. Cook the Turkey and Onions: Heat avocado oil, sauté onion, add turkey, and cook until browned.
  3. Combine Taco Filling: Stir in black beans, green chiles, taco seasoning, and water; simmer for 15 minutes.
  4. Prepare Tacos: Preheat oven to 425°F. Line baking sheet, place tortillas flat, add cheese and filling.
  5. Bake Tacos: Bake for 10-12 minutes until golden and crispy.
  6. Serve: Allow to cool, serve hot with avocado sauce and toppings.
