Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Remove the leaves from a fresh cauliflower head and cut into thick slices (3/4 inch) for steaks. Pat dry with a paper towel.
  3. In a bowl, mix olive oil, grated Parmesan, minced garlic, paprika, onion powder, salt, and chili pepper flakes into a smooth paste.
  4. Apply the seasoning mixture generously to both sides of each cauliflower steak.
  5. Sprinkle grated Parmesan cheese on one side of the steaks and press onto the baking sheet.
  6. Bake at 450°F for 10 minutes, then reduce to 425°F (218°C) for an additional 20-25 minutes until golden brown.
  7. Let cool briefly and serve the steaks crispy side up, garnished with fresh chives.
  8. Blend avocado, scallions, lime juice, jalapeño, olive oil, parsley, and water in a mini food processor until smooth for the dip.
