For the Gravy
  • 4 cups turkey drippings Substitute with chicken broth if needed.
  • 1/4 cup unsalted butter Can use vegetable oil for a lighter version.
  • 1/4 cup all-purpose flour Use gluten-free flour for gluten-free option.
  • 1 cup chicken broth Provides depth when drippings aren’t available.
  • 1 cube chicken bouillon Optional for extra flavor.
  • herbs and spices Customize with garlic powder, onion powder, thyme, salt, and pepper.

Equipment

  • fat separator
  • medium saucepan
  • whisk

Method

Step-by-Step Instructions
  1. After your turkey has finished roasting, pour the collected drippings into a fat separator to ensure a flavorful base. If you don’t have a separator, chill the drippings in a freezer bag and skim off the fat layer once solidified.
  2. In a medium saucepan, melt 1/4 cup of unsalted butter over medium-low heat. Whisk in 1/4 cup of all-purpose flour, stirring continuously for 4-5 minutes until golden brown.
  3. Gradually add your degreased turkey drippings or chicken broth to the roux, whisking constantly to ensure a smooth consistency.
  4. Increase the heat until the gravy reaches a gentle boil, then reduce to a simmer for 6-8 minutes, stirring occasionally until thickened.
  5. Taste the gravy and adjust seasoning with salt, pepper, and optional herbs like thyme or rosemary.
