Cooking Steps
- Step 1: Season the Beef. Pat the beef dry and sprinkle with salt and pepper.
- Step 2: Sear the Beef. In a Dutch oven, heat oil and sear beef in batches.
- Step 3: Sauté Onions and Garlic. Cook onion and garlic in the same pot.
- Step 4: Return Beef to Pot. Mix in the beef and arrowroot powder.
- Step 5: Add Liquids and Aromatics. Pour in red wine and beef broth, and add thyme and bay leaves.
- Step 6: Add Vegetables. Stir in potatoes, carrots, and celery, then simmer.
- Step 7: Serve. Remove bay leaves and garnish with fresh thyme.
