  • 1 cup buttermilk or regular milk with a splash of vinegar
  • ¼ cup vegetable oil or melted butter for richer flavor
  • 1 large egg
For the Honey Butter Glaze
  • ¼ cup melted unsalted butter
  • 2 tbsp honey
  • ¼ tsp salt

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a mini muffin pan.
  2. In a large mixing bowl, whisk together the yellow cornmeal, all-purpose flour, sugar, baking powder, salt, and a hint of pepper.
  3. In a separate bowl, mix the buttermilk, vegetable oil, and egg until combined.
  4. Fold the wet ingredients into the dry mixture until just combined.
  5. Scoop out batter, flatten it in your palm, add cheese, fold over, and roll into a ball.
  6. Place into the muffin tin and bake for 10-12 minutes until golden brown.
  7. Melt butter in a bowl, stir in honey and salt, and mix until smooth.
  8. Brush the poppers with the honey butter glaze and serve warm.
