Step-by-Step Instructions
  1. Preheat your oven to 180°C (356°F) and prepare a baking tray with parchment paper.
  2. In a large mixing bowl, cream together 100 grams of room temperature butter and 90 grams of sugar until light and fluffy.
  3. Gently stir in 175 grams of flour, 2 teaspoons of vanilla extract, ½ teaspoon of baking powder, and your choice of 3 tablespoons of honey or 2 tablespoons of golden syrup until combined.
  4. Divide the dough into three equal portions and roll each into a log shape about 2-3 centimeters in diameter.
  5. Flatten each rolled log slightly to create an even surface, aiming for a height of about 1 centimeter.
  6. Bake for 12-14 minutes until golden edges form and the cookies have a firm appearance.
  7. Remove from oven, let cool for a couple of minutes, and cut the logs diagonally into cookie-sized pieces.
  8. Allow cookies to cool completely on a wire rack before serving.
