Ingredients
  

For the Burgers
  • 1 pound Ground Chicken Meat Thighs recommended for extra moisture.
  • 3 tablespoons Scallions Can be swapped with green onions.
  • 1 cup Shredded Cheese Options like Cheddar or Gouda work well.
  • 2 tablespoons Mayo Greek yogurt is a healthier substitute.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Salsa
  • 1 medium Avocado Choose a ripe one for best texture.
  • 1 cup Fresh Corn Sweet corn from the cob is ideal.
  • 1/4 cup Chopped Cilantro Optional, can leave out if not a fan.
  • 2 tablespoons Olive Oil Any light oil can be a substitute.
  • 2 tablespoons Lime Juice Can use lemon juice as alternative.

Method
 

Cooking Instructions
  1. In a mixing bowl, combine ground chicken, chopped scallions, shredded cheese, mayo, salt, and pepper. Mix until evenly distributed.
  2. Use a ½ cup measure to portion out the patties, shaping each into a round patty about ¾ inch thick.
  3. Preheat a grill pan over medium heat for 3-4 minutes, then add a drizzle of olive oil.
  4. Carefully add chicken patties to the pan, cooking them for 4-5 minutes on each side until golden brown.
  5. While burgers cook, prepare the Avocado Corn Salsa by mixing avocado, fresh corn, and cilantro with olive oil and lime juice.
  6. Remove cooked patties from the grill pan, let them rest, then serve topped with Avocado Corn Salsa.
