- Prepare the chicken breasts by cutting a pocket in each, and season with salt and pepper.
- Sauté garlic in olive oil for 30 seconds, then add spinach and cook until wilted, about 2-3 minutes.
- Combine sautéed spinach, roasted red peppers, mozzarella, Parmesan, oregano, basil, salt, and pepper in a mixing bowl.
- Stuff each chicken breast pocket with the filling, securing with toothpicks if necessary.
- Heat olive oil in a skillet and sear the chicken breasts on both sides for 2-3 minutes until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through (165°F/74°C).
