Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken breasts by cutting a pocket in each, and season with salt and pepper.
  3. Sauté garlic in olive oil for 30 seconds, then add spinach and cook until wilted, about 2-3 minutes.
  4. Combine sautéed spinach, roasted red peppers, mozzarella, Parmesan, oregano, basil, salt, and pepper in a mixing bowl.
  5. Stuff each chicken breast pocket with the filling, securing with toothpicks if necessary.
  6. Heat olive oil in a skillet and sear the chicken breasts on both sides for 2-3 minutes until golden brown.
  7. Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through (165°F/74°C).
  8. Let the chicken rest for 5 minutes before serving, optionally drizzling with balsamic vinegar.
