- Preheat a large non-stick skillet over medium heat for about 5 minutes.
- Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.
- Place one slice of sourdough bread butter-side down in the skillet. Optionally, add Dijon mustard on the unbuttered side.
- Layer several slices of the roast beef followed by two slices of sharp cheddar cheese.
- Top with another slice of sourdough bread, buttered side up, and press down gently.
- Cook for about 3 to 5 minutes until the bottom is golden brown and the cheese begins to melt.
- Flip the sandwich over and cook the other side for an additional 3 to 5 minutes.
- Check for doneness; the sandwich should be beautifully toasted and the cheese fully melted.
